The time has come, the meat is ready for pickup. I must say that Westcliffe Meats was great to deal with. I was unavailable to pick up the meat until after 6 as I had to work until 5 and the owner agreed to meet me as he lived close to the butcher shop, how awesome is that. My daily driver is a Mazda CX5 and I thought it would be big enough to get all the meat home, I was right of course, but it was close.
When I arrived at the butcher shop I backed up to where he indicated next to a shipping container sized freezer and I folded down the back seat and I asked him how many boxes I would be getting, he said 13, not too bad we should be good. Wrong, I was wrong.
These boxes were huge. I ended up with a box on the floor on the passenger side in the front, 2 on the front passenger seat and the back filled to the top. I was then handed the fat I had asked for as I will add it to game meat that I process at home. I believe the total was just over 400 pounds of meat. The only open space left in the car was reserved for me.
The drive home was horrible as the meat was cryo frozen and my car was now a nice and cold meat locker on wheels traveling 75 miles an hour down the road, I had to open my window to let the 30 degree outside air warm me up, for the long drive home.
After hauling in the 13 boxes of meat and fat it was time to fill the freezer. Fill it it did, I completely filled the stand up freezer , I had to put all the hams and bacon in the chest freezer and the fat in my other stand up freezer/fridge. I had 100 lbs of sausage half Italian and the other half breakfast, 4 hams all cured with 2 smoked. About 30 lbs of bacon all cured ½ smoked, around 50 pork chops, ribs, ham steaks, pork roasts/butts and the 30 or so lbs fat, all of it looks awesome.
In all it is definitely worth the wait and the meat we will be able to use for possibly years unless we eat sausage and bacon and ham daily. We just might have to do this again in the future.
