After a long day at school, one of the most consistent things my kids say when they get home is, “What’s for after school snack?!”   They are always hoping for chips, ice cream, baked goods, etc. I try to provide healthy snacks, but at least once a week I like to give them a special treat.

The other day, before she went to kindergarten, my 5-year-old asked me if I would PLEASE make chocolate chip cookies for after school snack.  Since I am still feeling sentimental about her leaving me all day (the only choice where we live is for full-day kindergarten), I agreed.

As happens more often than not, the day wore on and I realized it was too late to make the cookies if I wanted them to be ready when they got home from school.  

I hated to not come through since I had actually promised her cookies. My mind went to my last resort, cake mix cookies.

I have been making different variations of cake mix cookies since college. They generally turn out good, but are never quite the same as completely homemade cookies.  I decided to hurry and throw a few ingredients together and knew if I did that, I could have cookies made for my daughters when they got off the bus.

Great Results

Let me tell you, these peanut butter chocolate chip cookies with oatmeal turned out AMAZING!  I’ve never really preferred the chocolate chip cookies that flatten and spread in the oven and these ones did not at all.  They were perfectly soft and fluffy and still maintained the general shape that I formed them into when I put them on the cookie sheet.

The best part is, there is literally 5 minutes of prep time and then they are ready to go in the oven! 

Replicating the Results

Since I had just thrown the recipe together and didn’t record the exact amounts of the ingredients that I added, I wanted to replicate the recipe to make sure it wasn’t just a fluke.   I ended up making them for a friend’s birthday a few days later and was pleased to see that I got the same results.

So this recipe has been thoroughly tested and proved to give consistent results in a very quick amount of time.

If you have a butter flavored or yellow cake mix, there is a very good chance that you will have the rest of the ingredients needed for these delicious, quick, one of a kind, cake mix cookies.

Super Quick Peanut Butter Chocolate Chip Cookies

This recipe uses a cake mix and simple ingredients to produce a soft, delicious peanut butter chocolate chip cookies in less than 15 minutes, from the time you decide to make them until they come out of the oven.

Ingredients

  • 1 box Butter flavored or Yellow Cake Mix Any brand.
  • 1 Egg
  • 1/2 cup Vegetable Oil
  • 1/4 cup Water
  • 1/3 cup Peanut Butter Crunchy or Creamy, whatever you have on hand and like.
  • 1/3 cup Oats Old Fashioned or Quick
  • 3/4 bag Chocolate Chips To Taste

Instructions

  • Preheat oven to 375 degrees Fahrenheit
  • Combine all ingredients in bowl and mix well.
  • Shape small balls of cookie dough and place on cookie sheet. I make them about 1 tablespoon size, but the important thing is that they are uniform in size.
  • Bake for 8-9 minutes.
  • Cookies are done when they are very slightly brown on top.
